All y’all ready for this? Brioche Pecan Rolls with Brown Butter Cream Cheese Frosting. Let the New Years Resolutions commence!

I didn’t think so. So let’s move on, shall we? I am getting a sad, sad enjoyment out of posting these right now. But I actually don’t feel too bad, because cinnamon rolls are so much work–will you even make these? Likely not.

These rolls are a riff on the Pecan Brioche Sticky Buns I posted before. Same song, second verse, and this time without the uber-sweet excess of goo(dness).

Here’s to kicking the new year off in the very rightest way. Stay tuned for FAIL WEEK, aka next week. It includes a smattering of my worst recipe fails from this year and a few clever bits of wordplay. Just you wait.


Brioche Pecan Rolls with Brown Butter Cream Cheese Frosting

For the rolls, I used this recipe.

For the frosting (enough for 8 generously frosted rolls):

1/4 cup (4 tablespoons) butter

4 ounces cream cheese

approximately 2 cups powdered sugar

a few tablespoons milk

1/4 teaspoon vanilla

Melt the butter in a small saucepan over medium heat, swirling occasionally until the butter is foaming, golden brown and nutty-smelling. Remove from heat. Beat cream cheese by hand in a medium bowl until creamy, then add the melted butter and beat together. Add powdered sugar in 1/2 cup increments until the butter mixture is just past a glaze consistency. Add milk if you would like a thinner frosting, add more powdered sugar if you would like a thicker frosting. Use half the frosting on the rolls when they are still warm so it seeps into all the cracks, then let the rolls cool just a bit more before piling on the last of the frosting.
